Maitre d' at Addison
As the Maitre d' at Addison, Costello oversees the restaurant operations and profit and loss of Southern
California's only Forbes Five Star, AAA Five Diamond and Relais & Chateaux Grand Chef Restaurant. In
his area of operations is the daily upkeep of the staff and maintenance of Addison's Wine Spectator Grand
Award winning wine collection and storage. Costello implements and takes a strong role in staff and
sommelier training which currently claims three Master Sommelier candidates and the entire corps of
Captains has attained the Certified Sommelier level.
Costello has completed in numerous wine related competitions including The Court of Master
Sommelier's TOP|Somm, The Chaine de Rotisseurs Young Somm Competition, the Ruinart Champagne
Challenge and successfully passed the advanced level of the Court of Master Sommelier exam on the first
attempt. Addison also received the prestigious Wine Spectator Grand Award in 2009 and 2010; and the
2010 "Wine Restaurant of the Year" Award, as well as the Wine Hospitality Award for Hotel/Resort Fine
Dining for three consecutive years, from Santé magazine. His efforts and expertise have helped earn the
AAA Five Diamond and Forbes Five Star (formerly Mobil Five-Star) ratings for Addison in 2011, 2010
and 2009 – San Diego's first and only restaurant to win these awards.
He was among the opening team at Addison, where he aided Jesse Rodriguez in the logistics of putting
together the fine dining venue's award-winning vast wine collection and 3,300-label wine list featuring
the gamut of fine wines – from top California vintage cult wines, to new discoveries from South Africa
and South America, to the classic wines of France, Italy and Spain – some housed in Addison's customdesigned 2,500-bottle wine room. Addison was named one of "America's Best New Restaurants for
2007" by Esquire magazine and one of ten of "America's Best Spots for Wine" by Forbes.com. The
impressive wine list compiled by Rodriguez was also named "One of the Best of Seven New Wine Lists
for 2007" by Food & Wine.
Before joining the team at The Grand Del Mar, Costello was part of the restaurant team at Carlsbad's La
Costa Resort and Spa. During his tenure with Addison he has had the opportunity to work amongst the
nations most acclaimed restaurants including Alex at the Wynn Las Vegas, The Dining Room at the Ritz
Carlton San Francisco and Kai at the Sheraton Wild Horse Pass all of which have received five stars and
diamonds.
He is a certified advanced sommelier by the American Chapter of the Court of Master Sommeliers, is a
Master Sommelier Candidate and has passed the Advanced Certificate of the Wine and Spirits Education
